The Biscuiterie by Laurence & Marc

20 years ago, Laurence & Marc started their biscuit shop specializing in the production of Provençal pastries. Their small factory is located in the Haut Vaucluse in the small town of Entrechaux.

Fresh ingredients from the surrounding area
Laurence & Marc pay a lot of attention to the quality and origin of their ingredients. They only work with fresh ingredients . Whole apricots, figs, etc. are delivered to the factory from the surrounding area. The almonds are also only opened in the studio to be processed further. The lavender flowers are grown by Marc's sister in the Vaucluse, the honey comes from a beekeeper in Valréas . The salt comes from the Camargue.
Grain & flour from your trusted miller
For the flour , the two work with a small grain mill in Grignan in the Drôme. The grain used is grown there without pesticides (organic and no genetically modified grains!). The flour has been individually tailored to their recipes in years of collaboration with the miller.
Traditional recipes but not only!
Pastries Provence handmade
Over the years, Laurence & Marc have created many creative pastry variations . From sweet biscuits with lavender flowers & white wine, to savory crackers with herbs from Provence & goat's cheese. But Laurence's has also adopted traditional recipes from their grandmother , craquants with almonds, navettes with anise... All products are of course free from coloring and other artificial additives.
Handcraft & the taste of real ingredients
Each piece of pastry is made by hand. Without any machines and only freshly ordered. This takes a lot of time and leisure. But you can taste the passion and time that the two put into making it.
Each pastry has its own dough and the flavors are perfectly balanced. They are particularly careful with the amount of sugar they use. Never too much , because the point is to emphasize the flavor of the fresh ingredients.
