A different side dish
I already mentioned that I love green asparagus!
Accordingly, I benefit from this great vegetable for as long as possible (between March and May).
One of my favorite recipes is really simple. Like so many vegetables, the flavor of asparagus transforms from very good to absolutely delicious when roasted in the oven!
The only thing you need is good, fresh vegetables. Preferably from a local producer to reduce unnecessary storage and transport and to preserve taste and nutrients.
You can make this recipe as a side dish to fish, meat, omelette, salad and much more.
It's quick and easy, you just have to make sure that the asparagus doesn't burn!
For 4 people you need:
- 1 kg green asparagus
- Sel de Camargue
- 5 tablespoons olive oil (for example our olive oil AOP Nyons )
- Parmesan in one piece
- 1-2 cloves of garlic (optional)
- Preheat oven (fan oven 180 degrees)
- Wash the asparagus, dry it and cut off the hard ends.
- Crush garlic cloves with skin on. For example, with the flat side of a large knife or the palm of your hand. It is not necessary to peel and finely chop the garlic.
- Now prepare a baking tray or an ovenproof dish. The dish should be large enough so that the asparagus can lie next to each other and not on top of each other.
- Place the asparagus and garlic on the tray/dish. Sprinkle with Sel de Camargue and drizzle with olive oil.
- Place in the oven for 20 minutes. Check regularly that the asparagus does not burn, as thin asparagus can burn quickly. Adjust the cooking time accordingly.
- Use a vegetable peeler to cut the Parmesan into coarse rinds.
- Remove the asparagus from the oven and sprinkle with the Parmesan.
