Do you remember the blog article in which I interviewed the travel writer, journalist, photographer and blogger Hilke Maunder? Hilke not only has a great blog ( https://meinfrankreich.com/ ), she also spontaneously wrote the cookbook Le Midi with 80 selected French recipes during the third lockdown.
Hilke loves France as much as I do. She is enthusiastic about the unique culture and the people who cultivate it. French recipe with truffle oil
To give you a little taste of the delicious French recipes from Hilke's cookbook Le Midi , today we're cooking Brouillade de truffes together: a typical French omelette recipe with truffle oil. The original recipe uses fresh truffles, but you don't always have them on hand when you suddenly fancy a wonderfully aromatic truffle omelette. That's why you'll find a version with high-quality truffle oil here. Just as delicious, easy to use and lasts longer than fresh truffles.
La Sariette's headquarters are located not far from the oldest French truffle market in Carpentras, where gourmets can enjoy their truffle every Friday morning from mid-November to the end of March.
This truffle recipe goes perfectly with grilled asparagus with parmesan and Sel-de-Camargue - for a little hunger between meals or for a light, balanced dinner. A slice of fresh baguette rounds off the French recipe perfectly.
The truffle oil gives the omelette a special aroma.
Ingredients for 2 people
1–2 tablespoons Amusèti truffle oil
6 eggs
1 teaspoon butter
2 tablespoons crème fraîche
Preparation: French omelette with truffle oil
- Whisk the eggs in a bowl and add the truffle oil. Leave to rest in the fridge for at least 5 hours.
- Then place a bowl in a water bath, melt the butter in it and cook the eggs in it, stirring constantly, until they slowly start to set. (Note: Do not cook the eggs as hard as you would with a normal omelette, but rather like a creamy scrambled egg.)
- Fold in the crème fraîche and enjoy.
